We are making West African-style Peanut Stew. It includes chickpeas, sweet potatoes, greens, spices and peanuts. *Peanut free option available but will be made in the same kitchen as the peanut version* Served with a scoop of rice and dessert!

As requested by several community members, we will be sharing info about some of the healthy ingredients we use in our dishes. This meal, we feature sweet potatoes and chickpeas. Sweet potatoes are a nutrient-dense root vegetable full of fiber, vitamins, minerals and antioxidants. Antioxidants help guard against inflamation and chronic illnesses like cancer and heart disease. Chickpeas, aka Garbanzo Beans are one of our favorite sources of plant based protein. They are inexpensive and easy to prepare! Chickpeas are high in protein, manganes, folate and iron. They are great for lowering blood sugar and thus, a wonderful addition to your diet if you struggle with diabetes or heart disease. And they are delicious!!
